Spanakopita of Rustic Greens


Heat EVOO, add onions & scallions – cook  5 mins
Stir in Kale, Red swiss chard,spinach
Add Dill, parsley, s+p, cook 5-10 mins until mostof liquid is gone
Drain and chopped
Stir in  cheese, and beat in eggs
Taste for seasoning
8-10 layers of phyllo, brushed each layer with butter
Cook in the oven at 350 for 25 minutes
